I learned the hard way that I should not pre-cook Zuccini before saute. My recipe is vegetarian with chard or spinach and then mushrooms. Rave reviews from the ski weekenders! I am so thrilled to try this recipe at home. I went all out and did a mix of broccoli, cauliflower, zucchini, yellow squash, and bell pepper for my 4 cups 8 actually since I doubled and froze one, and then kept the spinach and onion in the recipe as well and it was fantastic. Or, it might seem it while baking as this one does too but it should absorb back in as it rests before you cut it. Actually, I think Tofu would be great mixed in with the ricotta cheese layer. Add another layer of four noodles then repeat with remaining cheese and vegetables. I think they taste the closest to homemade. Recipe should specify that you'll need 12 noodles total if you follow the instructions and make 4 layers.

I, a lifelong Picky Person, am the latter. I used olive oil instead of vegetable oil. Add onion and cook, stirring occasionally until translucent, about 5 minutes. I loved that I could use up some broccoli and cauliflower in there, too! Toss to combine, letting the spinach wilt. Much lighter and not so heavy as a meat version.
